Chef Pascal will teach you how to cook and create delicious side dishes (or a main dish if you dare!) that will delight your family and friends. Croissants - we love them but at the same time think they are too hard to make. Wrong! The pastry has it's own unique characteristics; Kim will show you how to make this buttery, classic pastry in your own home. A demo will start off the class and everyone will make their own batch of pastry; then night two will include shaping and baking the dough you made the night before. Bring coffee or tea to go with the tasting of your croissants. Conversation about freezing croissants, baked or unbaked, will be included. Chef Pascal is also a butcher by trade. By combining butchering and cooking, Chef Pascal has the best of both worlds. Knowing where the meat comes from on the animal allows him to choose the best cooking technique. We will be cooking Duck a l`Orange, Tournedos of Filet Mignon Bordelaise, Rack of Lamb, and Pork Chops.  Chef will demonstrate how to cook every recipe perfectly so you can wow your friends and family. Everyone has a favorite and an opinion where to buy them, but they are easy to make; Kim will show you how. Each night  will begin with a demo, then the class will prepare four different doughnuts an evening to taste and share. We will not forget jelly doughnuts and ebelskiver (the Scandinavian doughnut!). Apple Cider Doughnuts, Lemon Mist Doughnuts, Maple Doughnuts, Chocolate Cake Doughnuts are just few we will be creating and EATING! Once Halloween is over don't we all start thinking entertaining? And  don't we always need new ideas for holiday hors d'oeuvres? In these two nights we will divide up into pairs and prepare four different small savory bites to be shared and eaten at the end of the evening.
